
Crust
2 cups raw almonds
1/2 cup pitted dates
1/4 cup of dried coconut
Mix in a food processor.
Do not over mix or it will turn into a nut butter!
Press into a spring form pan and freeze.
Filling
3 cups raw cashews (soaked 1 hour)
3/4 cup lemon juice
3/4 cup agave nectar
3/4 cup organic raw coconut oil
1 tsp vanilla
Blend in high-speed blender until smooth
Pour over frozen crust and freeze
Sauce
3 cups frozen strawberries
1/4 cup coconut oil
agave nectar (to taste)
for a thicker sauce add a bit of the soaked cashews
Blend well in high powered blender
Pour over pie right before serving.
Pile on the berries and enjoy!
